The pressure regulator fits onto the vent pipe to indicate when 15 lb pressure is reached and controls pressure in the unit. A gentle rocking motion of the pressure regulator indicates that proper cooking pressure is being maintained.

The cooking rack is used to hold jars off the bottom of the unit while canning. It is also placed in the bottom of the cooker when it is desired to keep food out of the cooking liquid when cooking, that is when steaming vegetables.

This kit replaces the pressure control weight and petcock originally packaged with canners of this type. The new pressure regulator fits onto the new vent pipe and controls pressure inside the unit.
|
The pressure regulator controls the amount of pressure that can be built up in the canner. It consists of the pressure regulator body and two 5 lb weight rings. Completely assembled, it will maintain 15 lb of pressure.
